I am such a frustrated cook + I aspire to make delicious + nutritious meals my son will actually love + eat, not to mention I am also very fond of cooking shows + demos, that I was so excited to find this invite on my inbox a few weeks back.

So far, we’ve had a very tiring yet exciting and very interesting {birthday}Ā week that time + this event was just the perfect ending to the amazing week it has been.

Jared + mum arrived to ActiveFun in SM – North a little before half past 3. The clouds are signalling impending rain so I decided to leave early to avoid it + so Jared can have enough time to run around the play area before the demo starts.

The event was running a little late compared to the scheduled 4pm but I did not mind, Jared had loads of fun swimming in the colorful balls in the play area, plus I got a chance to catch up with blogger friends, Fedhz, Vance + Mommy Joy {who invited me to this event}, before it started, so it was all good šŸ˜‰

Ms. Nadine Tengco, The Biggest Loser’s Fitness Nutritionist

It was the lovely Ms.Ā Nadine Tengco, a US-Certified fitness nutritionist + currently the resident nutritionist for ABS-CBN’s The Biggest Loser, who provided the easy yet nutritious + delicious cooking demonstration.Ā The menu for the day is Soyami Healthy Lunchbox + she prepared the following: Sneaky Tuna Nuggets, Sneaky Mac ‘N Cheese + Choco-Banana Smoothie. These meals are not only delicious but are also fortified with Vitamins + essential nutrients, with loads of soya goodness coming from Soyami Soya ChipsĀ  {soya, used to make these chips, is packed with calcium, fiber + minerals that boost the immune system, improves colon + lung health, is good for the skin+ prevents certain types of cancer, as well as arthritis, diabetes, allergies + osteoporosis}, that children + adult alike needs to go about in their daily activities.

The dishes are aptly called “sneaky” as veggies such as carrots + sweet potatoes are sneaked into these meals {pureed} undetected by suspecting children, clever, right? šŸ˜‰ {I will include the full recipes in a separate post}

Sneaky Tuna Nuggets – I’ve tasted this + I love it!

Apart from being healthy + delicious, these meals are also very easy to prepare so it is perfect for mums harassed preparing their husbands + children for work + school in the morning. You can even puree the veggies in big batches ahead of time and refrigerate them in ziplocks to be used the following mornings. Convenient + practical, I must say!

Choco-Banana Smoothie

Ms. Nadine gave numerous tips and trade secrets to the participants + even asked some mommy bloggers to participate in her cooking demo. Mommy Joy helped in preparing the tuna nuggets, as shown in one of the photos here:

+ of course, the cooking demo will not be complete without sampling the dishes, + I must say, the tuna nuggets are my favorite {I just love tuna} + I plan to make some of these for Jared to try. I’ve also sampled the Mac ‘n Cheese, just perfect for the kiddos since it is not so salty.

We also sampled Soyami‘s new product, Soyami Stix {I’ll make a separate post on it}, + I just love it. My son tried it, too! Ā I can’t wait for it to come out in the market so I can buy some for my personal stock! šŸ˜€

All in all it was a worthwhile + gastronomic experience, something I’d love to do again. Thanks so much Soyami for the invite, until next time!

sm masterchefs cooking marathon 2011 eton leg

I have always admired chefs + watched tons of cooking shows on the tellie dreaming I was cooking the same delicious + mouth-watering recipes in my own fully-equipped kitchen. That is why I was excited when I got an invite from Mr. NomNom himself, Jonel, to join him in the Eton-Centris leg of SM Hypermarket’s’ SM Masterchefs Cooking Marathon 2011 a few weeks back. Ā It was also my first time to travel to Eton-Centris so I was looking forward to the idea with anticipation.

For that day’s cooking demo, it was Chef Menoy Gimenez‘s turn to showcase his cooking prowess + boy what a brilliant chef he is! He actually made everything looked very easy that I was looking forward to making my own version of it in the future (when I’ve mustered enough guts, that is! :))

Here’s the recipe of what Chef Menoy cooked for us that day:

Ulam Burger Fajitas

What you’ll need:

  • 2 pcs of Ā Tortilla wrap
  • 1 pc of Ulam burger, panfried + cut into strips
  • 100 g of cheddar cheese, grated
  • 100 g of tomato salsa
  • 50 g of of Iceberg lettuce, shredded
  • 50 ml of garlic mayonnaise
What you’ll do:
  • in a large Teflon pan, heat up tortilla wrap until soft
  • assemble the rest of the ingredients in the center of the tortilla wrap
  • fold the tortilla wrap lumpia-style and heat again until the wrap turns a bit brown
  • cut into half + serve with nachos on the side
Tocino Chow Fan
What you’ll need:
  • 30 ml of peanut oil
  • 50 g of leeks (just the white part), chopped
  • 30 g of garlic, minced
  • 200 g of young pork tocino, blanched + stir-fried
  • 100 g of frozen mixed vegetables
  • 2 cups of cooked rice
  • 50 ml of oyster sauce
  • 20 g of chicken powder
  • 2 pcs of eggs
  • 50 g of leeks (the green part, this time), chopped
What you’ll do:
  • heat peanut oil in a wok
  • saute leeks + garlic
  • add in tocino + mixed vegetables
  • stir fry for about 2 minutes
  • add in the rice + mix until thoroughly combined
  • season with chicken powder and oyster sauce
  • beat eggs + pour into the rice mixture together with the leeks
  • heat through + serve hot
The dishes both tasted great + to think that every material used are those that are readily found in our pantries! Mouth-watering! šŸ˜‰

raising a picky eater

What do you do to make your kids eat the food that is served to them without giving in to their food preference?

I guess when it comes to feeding Jared, the key will always have to be listen to the signal he is sending or the message he is trying to communicate. I cannot really make him eat the food I served him 100% of the time + there is no way I will force him!

When he was just starting to eat his solids, it was really quite a daunting task to feed him, I noticed that he’d only want to try a different type of food once. If i mash him carrots for today, for example, I must give him a different one tomorrow, like papaya or other, the next day, otherwise, he will not eat it! It has been like that for awhile. Even when I make him Cerelac he would easily get tired of its taste + refuse having it the next day!

He also went into that phase when he’d entirely refuse any solid food I offer. I’ve tried variety of food but all I’d get as an answer is a mouth tight shut + several shakes of his head telling me “no mum”. I was worried for awhile thinking he might not be getting the complete amount of nutrients + minerals he needed to grow up stronger + healthier.

Nowadays, although we’d still have struggles when feeding, he’d normally gladly accept anything I feed him, especially rice + soup. My son just enjoys having soup, so we make it a point to include itĀ  in our menu each meal time as much as we can.

I guess the key really is to listen to what our babies are trying to tell us. They would accept solid when they want to + when they are ready, as much as they’d ask for their milk when they hungry + stop feeding when they are full.

For now, his feeding bottle is his best friend, but I have no worries about it. I read somewhere that it is really ideal to wait until your child is ready to wean, instead of force-weaning him. I guess, I’d content myself in listening for the meantime, anyway, there will be loads of time for solid eating when he is a bit older. I’ll let him enjoy the bottle for now.
