I have always admired chefs + watched tons of cooking shows on the tellie dreaming I was cooking the same delicious + mouth-watering recipes in my own fully-equipped kitchen. That is why I was excited when I got an invite from Mr. NomNom himself, Jonel, to join him in the Eton-Centris leg of SM Hypermarket’s’ SM Masterchefs Cooking Marathon 2011 a few weeks back.  It was also my first time to travel to Eton-Centris so I was looking forward to the idea with anticipation.

For that day’s cooking demo, it was Chef Menoy Gimenez‘s turn to showcase his cooking prowess + boy what a brilliant chef he is! He actually made everything looked very easy that I was looking forward to making my own version of it in the future (when I’ve mustered enough guts, that is! :))

Here’s the recipe of what Chef Menoy cooked for us that day:

Ulam Burger Fajitas

What you’ll need:

  • 2 pcs of  Tortilla wrap
  • 1 pc of Ulam burger, panfried + cut into strips
  • 100 g of cheddar cheese, grated
  • 100 g of tomato salsa
  • 50 g of of Iceberg lettuce, shredded
  • 50 ml of garlic mayonnaise
What you’ll do:
  • in a large Teflon pan, heat up tortilla wrap until soft
  • assemble the rest of the ingredients in the center of the tortilla wrap
  • fold the tortilla wrap lumpia-style and heat again until the wrap turns a bit brown
  • cut into half + serve with nachos on the side
Tocino Chow Fan
What you’ll need:
  • 30 ml of peanut oil
  • 50 g of leeks (just the white part), chopped
  • 30 g of garlic, minced
  • 200 g of young pork tocino, blanched + stir-fried
  • 100 g of frozen mixed vegetables
  • 2 cups of cooked rice
  • 50 ml of oyster sauce
  • 20 g of chicken powder
  • 2 pcs of eggs
  • 50 g of leeks (the green part, this time), chopped
What you’ll do:
  • heat peanut oil in a wok
  • saute leeks + garlic
  • add in tocino + mixed vegetables
  • stir fry for about 2 minutes
  • add in the rice + mix until thoroughly combined
  • season with chicken powder and oyster sauce
  • beat eggs + pour into the rice mixture together with the leeks
  • heat through + serve hot
The dishes both tasted great + to think that every material used are those that are readily found in our pantries! Mouth-watering! 😉

postcard perfect: cape cod, massachusetts

 My Postcard Perfect share for this week is this lovely island of Cape Cod (which is locally known as The Cape), which is the easternmost portion of the state of Massachusetts.

According to Wikipedia:

Cape Cod was formed as the terminal moraine of a glacier, resulting in a peninsula in the Atlantic Ocean. In 1914, the Cape Cod Canal was cut through the base of the peninsula, forming what may be loosely described as an island. The Cape Cod Commission refers to the resultant landmass as an island.

Cape Cod is also often mentioned in Nicholas Spark’s novels.
